How To Make Delicious Pineapple Upside-down Pancakes

Pancakes are simply a favorite among every generation. Kids love it, adults drool over it. Whether you cook it for fun or have it as a breakfast, pancakes are always the best policy. However, you can always surprise your loved ones with some innovative recipes, which will blow their minds.

Adding pineapple as an ingredient to your old-fashioned recipe will do the magic. Pineapple will give your pancakes an edgy twist and you will definitely enrich your breakfast time!

Pineapple Upside Down Pancakes:


This is a yummy recipe and you don`t need the skills of a chef.


-1/2 brown sugar*

-1/2 butter*

*these ingredients are needed for the caramelization of the pineapple.

-2 Tbsp. baking powder

-2 Tbsp. baking soda

-2 ½ cake flour

– ½ cup of sugar

-¼ Tsp. salt

-2 ½ cups of milk

-1/4 Tbs. vanilla extract

-1/4 c. melted butter


First start caramelizing the pineapple. Add the butter in a skillet and melt it, then add brown sugar and mix for a minute, next add the pineapple, cut into rings, into the skillet. The pineapple will caramelize.

Next, start preparing your pancakes. In a bowl add the flour and baking powder, next add the baking soda, salt and sugar, mix the ingredients and next add the milk, vanilla extract and melted butter.

Once you have prepared the mixture, put the skillet over the stove, melt a pat of butter and put ½ cup of the mixture in the center of the skillet. Your pancakes should be thick. Once you have done this, add the pineapple rings in the middle and add cherry in the middle of the pineapple.

Wait until your pancake is well- cooked from one side, before you consider flipping it to the other.

Simple Pineapple Pancake Recipe: this recipe is rich and juicy, you won`t even need a syrup!


-1/2 cup crushed pineapple

-2 cups Bisquick

– 1 egg

– 2 Tbs. white sugar

– ½ cup brown sugar

– 1 Teaspoon vanilla extract


First, add Bisquick, egg, white sugar, vanilla extract and milk in a big bowl. Spray the skillet with Pam cooking spray and pour ¼ cup of batter per pancake. Add the mixture in the skillet, let it cook and before flipping, sprinkle with crushed pineapple and brown sugar on every pancake.

You will need 15 minutes for this recipe, for 6 servings. It`s super easy to prepare and full with flavor!

Pineapple pancakes with a cinnamon twist:


*For the pineapple

– 1 cinnamon stick, broken in half

– 1 pineapple, large, cut into rings

– 1 Tbsp. butter (unsalted)

– ¼ dark brown sugar

– ¾ dark rum

*For the pancakes

– 1 cup buttermilk

– 1 cup flour (all-purpose)

– 1 egg

– 2 Tbs. butter (unsalted and melted)

– 3 Tbsp. sugar

– ¾ tsp. kosher salt

– ½ tsp. vanilla extract

– 1 tsp. baking soda

– vegetable oil spray (nonstick)


*For pineapple

First melt the butter in a skillet and add the cinnamon stick over medium heat. Cook for about 2 minutes, until butter turns brown and then add the pineapple rings- cook each side until it turns golden brown or approximately 4-5 minutes.

Remove it from heat and add brown sugar and rum. Cook until the mixture turns syrupy, then put the pineapples on a plate and the syrup aside.

For the pancakes

Whisk flour, kosher salt, sugar and baking soda in a large bowl and then add buttermilk. Prepare the oven, put it on 325°F and, set a wire rack on a rimmed baking sheet. Heat a skillet and spray it with vegetable oil.

Pour ¼ cups of the mixture in the skillet, cook it for about 2 minutes, until you get bubbles on the top and golden brown color, put the pineapple rings over it and cook for additional two minutes. Put the pancakes in the oven and bake for 5 minutes.

After the pancakes are done, reheat the syrup from the pineapple preparation and pour it on the pancakes. Juicy and delicious!
