 1. Potato & Basil Soup Recipe

 Ingredients:

  • 1 onion
  • 1 carrot
  • 3-4 potatoes
  • 1-2 table spoons of oil
  • 1 l of warm water
  • Bouillon powder (1/2 tea-spoon or less / more, depending on your own taste)
  • 3-4 fresh basil leaves / or 1 tea-spoon of pesto sauce
  • Spices to own taste (black pepper/ garlic powder)

Preparation:

Clean the onion and the carrot and cut them in smaller pieces; do the same with the potatoes and dice them with a knife; then heat your pan and add 1-2 tablespoons of oil and fry all the veggies for 5 minutes. Add the spices (a dash of black pepper or garlic powder) and the bouillon powder and stir quickly. Gradually add warm water and let it all simmer until all the veggies are cooked. At the end add freshly chopped basil leaves (if you don’t have fresh basil, you can use some pesto sauce as suggested above). The ingredients here are suggested for 1-2 persons, if you need to prepare it for the whole family, simply double the ingredients.

  1. Potato & Red Peppers Soup Recipe

 Ingredients:

  • 1 onion
  • 1 carrot
  • 1 red pepper
  • 1 tomato
  • 2 potatoes
  • 1-2 tablespoons of oil
  • Spices (own choice, black pepper/oregano)
  • Bouillon powder or salt (own choice, ½ tea-spoon)
  • 1 l of warm water

Preparation:

Wash and clean all the vegetables and cut them in pieces; if you do not like the tomato skin, you can peal it off with a knife or put it in hot water for several minutes so you can peel off in an easy way. Put the peeled and diced potatoes together with other veggies in the pre-heated oil and stir for 5-10 minutes. Add all the herbs and spices and gradually add warm water. Let the potato soup simmer for 30 minutes or until the vegetables are cooked (I like my veggies with a bite to it but it is up to you to decide, the longer you cook your veggies, the more they will lose their nutritional value). This is a nice spring-time soup to enjoy on your balcony while reading a book!

 3. Potato & Cabbage Soup Recipe

Ingredients:

  • 1 onion
  • 1 carrot
  • 3-4 bigger potatoes
  • ½ of a small cabbage
  • 1-2 tablespoons of oil
  • 1-2 table spoons of plain flour
  • ½ teaspoon of red paprika powder
  • Spices and herbs (own choice, black pepper / oregano / parsley)
  • Bouillon powder or salt (own choice, ½ tea-spoon)
  • 1 l of warm water

Preparation:

Preheat the oil and put the clean and cut vegetables in the pan to be fried, together with all the spices and herbs; in the meantime, cut the cabbage into thin shreds and add to the vegetables, mix thoroughly for 5-10 minutes. Then put the flour and paprika powder in and continue frying the whole mix until the flour disappears (if you think you need to add another tablespoon of oil, feel free to do so, this will depend on the amount of veggie consistency in the pan). Start adding warm water and let it all simmer for 30-40 minutes. It is optional if you want to serve the cabbage and potato soup with 1-2 table spoons of yoghurt or sour cream.

  1. Potato & Beef Soup Recipe

 Ingredients:

  • 1 onion
  • 1 carrot
  • 1 tomato
  • 300 gr diced beef
  • 4-5 potatoes
  • 3-4 cloves of garlic
  • 1-2 tablespoons of oil
  • 1-2 table spoons of plain flour
  • ½ teaspoon of red paprika powder
  • Spices (of own choice, black pepper / 2-3 bay leaves)
  • Bouillon powder or salt (own choice, ½ tea-spoon)
  • 1 l of warm water

 Preparation:

Pre-heat the oil in the pan and add the diced beef, while you have previously washed and cut all the veggies into bigger pieces. Stir fry the beef dices with all the spices and herbs in and after 10-15 minutes add the flour and the paprika powder. Starting adding the warm water gradually and let it boil and then simmer for 40-60 minutes, depending on the meat that needs to be cooked thoroughly. When everything is cooked nicely and the meat is soft, add finely chopped cloves of garlic. Bon appétit!

  1. Green Onion Creamy Potato Soup Recipe

Ingredients:

  • 4-5 green onions (with green leaves)
  • 1 carrot
  • 4-5 potatoes
  • 1-2 table spoons of oil
  • Spices (black or white pepper)
  • 1-2 table spoons of bouillon powder
  • 250 ml milk
  • 750 ml warm water
  • 4-5 table spoons of cooking cream

Preparation:

Chop the green onions (including the leaves) finely, rasp the carrot, dice the potatoes and put them all into the preheated oil. Mix the veggies and put in the spices too – after 10 minutes, start adding warm water and milk mixture, while stirring everything.

Let it all simmer. When the veggies are cooked enough, blend them in a blender. Put everything back to heat and finally add the cooking cream, as suggested. You will have the nicest creamy soup ever!
