Blackened Chicken with Fennel Slaw
This recipe is low in carbs, packed full of protein and veggies, not to mention that it is easy to prepare. If you love eating chicken, then you will love this. This is what you will need:
- 1/3 cup of crumbled Feta
- 1 Sliced avocado
- 2 tablespoons of fresh lemon juice
- 1/3 cup of sliced red onion
- 3 sliced celery ribs
- 3/4 cup of chopped fennel fronds
- 1 thinly sliced large fennel bulb
- 3 tablespoons of olive oil
- Kosher salt and black pepper
- 1 1/2 teaspoon of blackening seasoning
- 1 1/4 pounds of chicken cutlets
First, season the chicken cutlets with blackening seasoning as well as kosher salt and black pepper. Cook it in a tablespoon of olive oil in a large skillet on a medium-high heat. Cook each side for about 3 to 4 minutes, or until it is cooked thoroughly.

- 1/3 cup of fresh cilantro
- Some olive oil
- A sliced cucumber
- 3 large sliced tomatoes
- Kosher salt
- 1 tablespoon of sugar
- 1 cup of cider vinegar
- 1 teaspoon of cumin seeds
- 2 teaspoon of mustard seeds
- 2 teaspoon of coriander seeds
- 1 small thinly sliced red onion
First, place the onion in a bowl (glass or ceramic). Cook the coriander and mustard seeds in a saucepan on medium heat. Stir it now and again until the seeds start to pop. Cook them for about one to two minutes. Then, add cumin seeds and cook them. Stir them until fragrant for ten seconds. Put in the seasoning. Sugar, vinegar, a tablespoon of salt, and a cup of water. Simmer and stir it occasionally until salt and sugar dissolve for one to two minutes. Pour the mixture over the onion and let it cool down to room temperature. Then, cover it and put it in the fridge for at least an hour or up to two days. Then, drain, reserving 1/4 cup pickling liquid.
When it is time to serve, arrange the cucumber, tomatoes, and onion on a platter. Drizzle the delicious dish with olive oil and reserved pickling liquid. Top it off with cilantro and you have yourself a delicious, low-carb salad.
