How to Make a Beet Kvass?

Ingredients:

  • 2 raw, organic beet roots
  • spring or filtered water
  • 3 Tbsp. pickle juice or sauerkraut juice
  • -½ tsp. of Himalayan salt (optional)

Preparation:

-If you are using organic beets, then it’s recommended for the peel to be left. Just because it contains good bacteria that drive the fermentation process. However, if you are using other beets, then it’s advisable to peel the beets, in order to avoid pesticide residue. Also, be careful with tap water, first boil and cool the water, then add it to the beets. That’s why it’s best to use filtered or spring water. You’ll also need a big jar, for the beets and the liquids.

First, place the beets, until you fill 1/3 of the jar. Then, add the sauerkraut and pickle juice, the water and the salt. Leave some space between the top of the liquid and the lid, about 2 inches and shake the jar until the salt dissolves.

Keep the jar at room temperature and release pressure every day. The fermentation process lasts for about seven days, depending on the room temperature. There is also a possibility of mold or scum to appear in the jar, however you can easily open the jar and clean it with a spoon. You can always try the kvass every day, to check on your fermented beets. However, fizzy bubbles are a sign of ready beet kvass and then you can move the jar into the fridge and consume the beet kvass.

Once the beet kvass is ready, you can easily incorporate it in your daily diet. You can eat it as a salad, or add it to other dishes. Whichever way you choose, you won’t regret it, because the benefits are endless.
